Does anyone infuse your kombucha with fruit juice, herbs, and other ingredients in the refrigerator then filter out debris then bottle and allow to carbonate at room temp? Kombucha

I've been doing this for a few batches and I find it works great. I don't have stuff floating around the bottles when it's finished fermenting (other than a mini SCOBY). Are there any downsides to this method?
