Question regarding Prime Rib recipe. AskCulinary

Hello everyone!,

I'm interested in making a Prime Rib roast for Christmas dinner and am unsure of a few things. Maybe you can help. First, I'd like to cook the prime rib to Medium and am unsure if I could adjust the temp slightly to get to medium faster. Additionally, as stated in the recipe it notes that it would take 3 1/2-4 hours to get to medium rare at 200°. It states that if friends arrive later and it has cooled that you can place it back in the 200° oven for 45 minutes before the final step, blasting at 500° or higher for a short time span. My wife is preparing a ham and I wanted to do the Prime Rib the day before. I wanted to know if I could place it in the refrigerator for the night after cooking and the cook at 200° for 45 and the blast it for 20 or if the Prime Rib would be destroyed.
