Why do refrigerators "leak current" and tend to trip GFCI electricians

A while back I had an electrician install a GFCI breaker on my kitchen circuit. It includes the fridge. It has never tripped in GFCI status, but I've heard several times that fridges tend to cause nuisance trips. The circuit trips when I plug in too many appliances, but it did that before I upgraded the circuit breaker.

My question is what happens in a fridge that causes it to leak current? Where does that leaked current go? Is it being grounded out through the ground prong of the plug? Shouldn't one be concerned if a fridge would constantly trip a GFCI outlet?
