Hot water leak under concrete slab, insurance won't cover DIY

So I am trying to get insurance to cover but since I prevented damage, they won't pay for the damage required to actually fix the issue. If I had let damage occur, it would have been covered. Lesson learned. Let shit get screwed up big time so insurance will cover.

It would cost me more than $7000 to rip up my hardwood floors (solid bamboo) and fix the leak under my slab.

Therefore, I am looking at other options. One option is to re-pipe my hot water lines using PEX. Am I crazy for wanting to do this myself? I don't have much experience with PEX but it looks easier than copper which I was done some small replacements.

Details, my house is one story on a slab. I would tie the hot water heater output to a manifold then run individual pex lines to all existing hot water locations through my attic. I can access the back of all of the showers and faucets through the drywall. I see this job as not being overly complex. The biggest question is whether to also replace all the cold water copper at the same time. The cold water lines are more difficult because I don't have good access to the water supply line to the refrigerator or the exterior faucets.

I am really tempted to do this myself but am I just being stupid in thinking I should do it?

TL:DR - Slab leak. Should I fix myself repiping the hot line with pex and also replace my copper cold lines (which don't currently leak) at the same time? Should I leave to a professional?
