I haven't eaten machaca (aka carne seca, dry shredded beef) in years, but it just dawned on me that it would be a great keto lunch or snack for those who don't have access to refrigerators at work. While it's most often eaten in a burrito, it can definitely be eaten on its own, added to soups, or scrambled in eggs (at home). You can find it at any Latin/Hispanic food store or meat market, and there are several recipes online.
