I'm not exactly sure how this happened, but I bought a box of Arla brand UHT whipping cream and kept it sealed and on my shelf at room temperature for a couple weeks.
A couple days ago I opened it, used a bit, and then put it in the refrigerator. Now, when I opened the carton today, it seems the cream has solidified into some kind of thick whipped cream, kind of like Cool Whip I guess. It's not just a layer of fat floating on top, I stuck a chopstick in and it's definitely thick all the way to the bottom.
The cream smells fine, and it tastes fine. I used some in my coffee this morning (perhaps against better judgement), and I'm still alive and well.
So my question is what happened?? My only guess is that somehow opening the cream at room temperature and then cooling it in the refrigerator after had some kind of weird effect on it.
