Just Starting Out homestead

My boyfriend and I have been compiling research slowly while we shop for a fixer upper with a decent back yard, or *gasp maybe an acre of land which is sometimes easy to find in our city especially with vacant lots next door. We can't afford, even with tax credits solar panels right away and want to be as energy efficient as possible while easing into homesteading. I have a bunch of appliances on the list as we are also starting out with a tiny home, but I want to make sure I am getting the best stuff I can for the best price. What kind of appliances do you use as far as stoves/ovens, washers/ dryers (for winter when we can't dry outside or fit everything on a line inside because of space), and refrigerators? The smallest energy efficient ones I can find on Energy Star are 9.9 cu ft I believe and I am not sure at this point if that is too big for us. Thank you so much!
