Thee best spicy Thai carrot soup that doubles as a marinade for under a dollar MealPrepSunday

Hey Reddit,

I decided to sextuple my favorite soup since it's that amazing. The flavor is a mixture of salty, spicy, sweet, and umami. When making the soup, I thought why not use it a marinade as well? Due to the insane quantity I made, why not share this with Reddit mealprep.

I decided to sextuple the recipe: 6 onions ($2.5), 2 bags of large carrots ($5), 18 pieces of garlic ($1), galangal ($6) (12~ thumb size pieces), 8tbps(I am going to use 7 tbps next time) cumin, 10 thai chili (50 cents) (or to taste), 24 cups of chicken broth ($1.5 for the Knorr chicken granulated bouillon), 1.5 cups of jasmine rice($1), 6-7 whole stalks of lemongrass($2), 24 tbps of olive oil, 1.5 tbps nutmeg, 4 limes, 6 tbps soy sauce, 12 tbps fish sauce, 2 tbps of cardamon, 100oz of coconut milk($10).

Don't use ginger... they're not same thing ... I highly recommending going out of your way to find some galangal. You can typically find at a local Asian store. I'd recommend either ask them for help or look for the extremely large root that looks like ginger without the skin and kinda dirty.

I personally added 1/8 to 1/4 of a tsp of ghost peppers into the chicken broth at beginning. Make sure to add the ghost pepper into the beginning so you can cook down the spice. Be careful if you're unfamiliar with ghost pepper, it can be extremely hot.

In total, it made around 4~ to 5~ gallons. I froze around 3 gals, 1 gal for this week, and used the rest of the soup for marinading chicken and pork. I picked up around 4 lbs of chicken($10) - (5 large breasts) and two pork chops(dinner tomorrow). I diced the chicken into cubes, measured 4oz, packed them into single serve zip lock bags, added 1/2 a cup of soup to each ziplock bag, removed the excess air, chilled the sealed zip lock bags in ice cold water, then threw them into the refrigerator for 12 hours, and then frozen them.

$30 to $40 total 14 single serve chicken in marinade 48~ cups of soup

Around $.5 to $1 per serving give or take. :)
