Socioeconomic Switch? sociology

Hello everyone,

I was recently explaining to my wife about how lobster was once deemed as a food for poorer people due to the proliferation of refrigerators.

Now days lobster is a high class commodity. What is the term for a switch like this? Something that was meant for one social class but is suddenly indicative of any other class?
