2nd fermentation after refrigeration? Kombucha

I'm new to brewing kombucha, but from what I've read, one is supposed to bottle ready kombucha in airtight bottles, let them sit at room temperature for 2-3 days, and only then refrigerate. I'm having some issues with finding enough room in the refrigerator for several small bottles, however. Would it work all right if I were to fill one bottle, refrigerate the remainder, let the bottle ferment, and then start second fermentation on another bottle? In other words, can I do second fermentation using refrigerated kombucha, or does it have to start from room temperature?
