[FP] Individual Chocolate-Raspberry Cheesecakes keto

Adapted from Maria Emmerich's Quick and Easy Ketogenic Cooking, "Strawberry Cheesecake in Jars," I changed it to raspberry because 1) I only had raspberry tea and extract and 2) I'm cheap. I'm sure these would work great with different flavored tea/extract combinations.

Ingredients:

  • 8 oz. cream cheese or marscapone (softened)

  • 1/2 TBSP plain gelatin

  • 1/4 cup strong-brewed raspberry tea

  • 1 cup unsweetened almond milk (I used vanilla, she says you can use either vanilla or plain)

  • 1/4 cup Swerve/erythritol/equivalant sweetener

  • 1 TSP raspberry extract

  • 1 pinch sea salt

Optional Chocolate Drizzle:

  • 3 TBSP butter or coconut oil

  • 3 TBSP unsweetened coconut powder

  • 2 TBSP Swerve/your choice sweetener

  • 1/2 TSP raspberry extract

Directions:

  • Place the tea in a small heatproof bowl. Sift the gelatin over the tea and whisk until dissolved.

  • Place the cream cheese in a bowl and mix with a handheld mixer until smooth and no lumps remain. Pour in the gelatin mixture, almond milk, sweetener, raspberry extract, and salt and mix until very smooth.

  • Pour into 6 serving cups. Cover and place in the refrigerator to set, about two hours.

  • Meanwhile, make the chocolate drizzle if using. Melt the butter over low heat. Stir in the cocoa powder, sweetener, and extract until completely melted. Let cool to room temperature before using.

  • Pour 1 TBSP of the chocolate drizzle over each cup just before serving. Store in the refrigerator until ready to serve.

Tip:

  • If you plan on making this recipe ahead of time and not serving it the same day, use 1/4 TSP less gelatin than originally asked.

If you want to save on calories, the cheesecakes are just as tasty naked without the chocolate drizzle. But the chocolate is definitely a decadent addition.

According to MFP, the recipe (with chocolate) works out to 198 calories, 18.7 grams of fat, 4.9 grams carbohydrates, and 1.2 grams of fiber per serving.
