The catering company I worked for the last 5 months is awful. One of the worst kitchens I've ever worked in.
Raw meat is routinely prepped right next to cooked meat and veg (I was the one who had to point out to our sous chef that that wasn't okay!). Sous chef has left breast milk out on a prep table all fucking day. In a kitchen full of 20 people, maybe 3 of us label and date shit. Everyone else just shoves it into the refrigerator, so there are a bunch of "mystery cambros," which are often filled with putrid, rotting food.
The food that comes back from events is stored in hot boxes overnight where it's pulled out, still warm, the next day, then re-served. I tried to point out that we shouldn't be doing shit this way several times, but no one gave a fuck.
The final straw came when I accidentally dropped two seared chicken breasts on the floor. I put them into the green waste and told the chef, apologized for my carelessness. He told me to pick them out of the trash and rinse them off so we could bake them off and serve them. I refused, but he got someone else to do it.
I put in my two weeks notice last Thursday, but guys, I'm not going back after today.
Today, there were two cases of putrid, rank raw chicken. I mean, I could smell this shit across the room while my coworkers were opening it. All of us were concerned. Five of us independently went up to chef to tell him that this chicken was spoiled. His response? Rinse it off, it's fine.
I tried to argue that the chicken was sour, and going to make people sick. Nope. He had folks rinse it then wrap it up on sheet pans and stuck in the freezer. With no goddamn date, of course.
Fuck those guys. It was a horrible work environment, and I'm seriously very concerned for their customers' safety. I'm looking into making a report to the health department right fucking now.
Good riddance, and wish me luck finding my next job.
