a few ketchup variants recipes


i'm not big on regular store-bought ketchup so i resolved to make my own ketchup. after looking at dozens of recipes, i came up with my own, as well as a few variants (spicy, honey bbq, and mushroom). i plan to make small revisions in the future, but making all of these produced enough ketchup to last me months.


plain ol' delicious ketchup:



  • 1 cup tomato puree

  • 1/4 cup brown sugar

  • 1/3 cup cider vinegar

  • 1/4 cup onion, diced as small as possible

  • a pinch of cayenne

  • a pinch of allspice


fantastic spicy ketchup:



  • again, 1 cup tomato puree

  • 1/3 cup brown sugar

  • 1/4 cup cider vinegar

  • 1/4 cup onion, pulverized

  • 1 to 3 tsp cayenne

  • a pinch of allspice

  • 1 to 3 tsp chili powder

  • optionally, a dash of chipotle in some form (i used hot sauce)

  • optionally, a dash of liquid smoke

  • adjust amount of spicy ingredients depending on how spicy you want it


i can't believe it's honey barbecue:



  • big surprise, 1 cup tomato puree

  • 1/4 cup brown sugar

  • 1/4 cup cider vinegar

  • 1/4 cup honey (from bees)

  • 1/3 cup onion, vaporized

  • 1 tsp liquid smoke

  • a pinch of cayenne

  • a pinch of allspice


check out this amazing mushroom ketchup:



  • you'll never believe that it's another 1 cup of tomato puree

  • 1/4 cup brown sugar

  • 1/3 cup cider vinegar

  • 1/4 cup onion, atomized

  • 1 cup mushrooms (your pick), give them the onion treatment

  • wow, no way,

  • a pinch of cayenne

  • a pinch of allspice


cooking directions for all recipes:



  • take all of the ingredients and put them in a pot

  • stir it up crazy good

  • heat it until it boils (cover it or your stove will look like an art project)

  • reduce heat, optionally remove cover to allow delicious aromas to waft about your kitchen

  • cook half an hour or until you get tired of waiting

  • put it in the refrigerator for hours or until you get tired of waiting

  • eat it until you get tired of eating


about the onions and mushrooms:



  • if you don't want chunky ketchup, these ingredients need to be blended to hell and back

  • if you want or don't mind the chunks, just dice them

  • i think chunky works fine if you're just going to pour it on a burger, not so good for dipping


chef's notes:



  • wow who knew ketchup was so easy to make? the hardest part was cleaning up

  • if you want, use fresh tomatoes and puree them yourself (i don't know how to do that)

  • why didn't anyone tell me liquid smoke is so awesome
