Potassium broth? xxketo

I came across this recipe, and it sounds good, especially since I'm getting sick of regular broth. But how would one measure the amount of nutrients (and carbs) in something like this?

To make a big batch of scrap broth: Roughly chop the peels from 2 potatoes, 2 carrots, 2 celery stalks, 1 whole onion and 1 bunch of parsley (with stems). Place the veggies in a large pot. Add a handful of dried mushrooms and 8 cups of water. Let simmer for at least an hour (or 6 hours in a slow cooker), stirring occasionally. Strain the liquid before serving. Store for 4 days in the refrigerator or up to a year in the freezer in an airtight container.

Meal ideas...help! xxketo

So i normally am a bring your lunch to work and i drink keto shakes typically during the work week to make it easy. Tomorrow i am in a training until 12 and a meeting until 4:30. Any suggestions for food that doesnt require a refrigerator? I might be overthinking this, but meal prep stresses me out when it changes like this

[Request] KetoChow/BPC/Uber-Breakfast Shake on the Go? xxketo

I'm about to start a new job (!!!) that will be high-pressure, 60+ hour weeks, and a huge step up in my career. I'm recommitting to Keto so that I'm primed mentally to perform at my best.

I lift 3 days a week, and do yoga or run on the off-days. I'll be headed directly from the gym to work on-site, and will not have a refrigerator I can access from the time I leave for the gym to when I get home.

I'd like to create some sort of shake that combines Bullet-Proof Coffee with the heavy cream-based KetoChow shakes that I've relied on in the past into some sort of uber-breakfast that doesn't require refrigeration.

I'll be doing some tests with KetoChow Vanilla / Coffee / Coconut Oil this weekend, but if anyone has already cracked the code, I'd love to hear your recipe!

Anyone try any new recipes this week, or planning on adding a new dish to next week's menu? xxketo

I made a cheesy spinach stuffed chicken this week. It was fantastic!

Tonight, I also made fathead pizza for the first time. I topped it with pesto, chopped baby spinach, mozzarella, pepperoni and I unrolled and chopped up a few of those meat/cheese spirals with sopressata and prosciutto (I'm sick of snacking on the rolls, so it was good to get rid of them). Mind blown!!

I'm looking to you ladies for more inspiration!

I've been thinking about making a type of dessert, but I'm scared to awaken my sweet tooth. In fact I bought strawberries and blueberries, but after they sat in the refrigerator for a week, I fed them to the chickens today. Meh. Maybe someday?

Keto changed my taste preferences xxketo

So the pre shark week munchies kicked me out of ketosis and I figured that since I'm out of it I might as well go for gold and drink an entire large bottle of plain kefir and finish some thanks a lot girl scout cookies that have been lurking in my refrigerator for weeks while I do some school work.

Boy oh boy was I in for a shock.

One- the cookies were still fresh after 4 weeks open which is unbelievable. Small but still a miracle.

Second - the cookies were overwhelmingly sweet. Too sweet in fact so I had to throw the last few away instead of eating all of them. Granted they are shortbread cookies with chocolate but I ate entire boxes of the stuff before and thought they were fine. This is hugely surprising since I haven't abstained from sweet keto approved snacks such a lily chocolate bars and sugar free gum. I was the biggest sugar fiend before keto and had no problem eating 3 snickers bars at once. Now the thought of doing that makes me literally sick to my stomach.

Third - I though the plain Lifeway keifr was sweet. Before keto I thought it was very tart with no sweetness whatsoever so that was a huge surprise.

The Keto diet changed my taste preferences and I am very happy about it.

Husband and Wife first day of Keto! xxketo

My husband and I are on our first day of Keto. He has been amazing supporting me through every dad diet under the sun until I just gave up a couple of years ago. Finally we realized we needed a change and this time we did the research together. While he works from home mostly (making cooking etc easier) I work in the community, often working doubles and constantly on the run (which has contributed to my weight gain as I have always seen fast food as an easy supplement to a nutritional meal). Here is my question, and the thing that I worry will get in my way: What are some good snacks, meals or tips for eating on the run that I wouldn't need to refrigerate? As much as I would love to drive a refrigerator van, my little Sunfire will have to do for now!

Getting burned out by work travel, would love some food-spiration. xxketo

I've been Keto for nearly two years and only 4 months in to this job which has me away from home nearly every Monday-Friday. I do love my job, but the travel/time to find something is a challenge. I'd love some help to spice up my eating, though I have limitations. (I'm sure this has been discussed at length, but tonight's Wal-Mart salad left me just sad.)

Some stuff: -Many hotels I stay at don't have refrigerators in the room.

-Nuts, Quest, and jerky...check. They're in my bag.

-Oh gawd, that awful US hotel breakfast: icky eggs and some sort of "meat" thingy. ...Just swallow it down. Hey hey though, they've got 368 carb options!

-Lunch and sometimes dinner needs to be grab and go. When I'm busy, I'm very busy, and at the site for 12+ hours.

-I use the KetoFinder app for chain restaurant options, but some of these sites are remote and don't have too many restaurant choices.

Anything you can offer will likely be helpful.

The site I'm at now has a Mexican restaurant, BBQ restaurant, steak place, and sandwich shop, plus Wal-Mart, Taco Bell, Subway. I mean, nothing against those places, but I need new flavors or something.

Oh ladies, please help me out of this food-funk!

cereal hack .. xxketo

apologies, if this was a done and dusted topic.

I miss crunchy cereal breakfast sometimes and I found a quick solution to it.

1 cup unsweetened almond/vanilla/cashew milk

1 tbsp chia seeds

raspberry sugar free syrup (your choice)

1/4 cup walnuts

mix it in a container and leave it in the refrigerator overnight. awesome crunchy filling breakfast !

calories:290 carbs:11 fiber:8 net carb : 3 fat : 26 protein :9

something about soaked walnuts vs adding them on top of the chia seeds pudding ? made a huge difference for me. it is even lunch worthy !

Looking for "perfect" keto meals. xxketo

In advance, I'm really sorry about my tone. I'm ready to murder somebody if it would make a cookie brownie be healthy, and r/keto seems a bit more concerned with math itself than what that math means for a meal. Reddit search sucks baboon butt.

I'm going from two weeks on keto at maintenance to 4 weeks on keto on a cut. The macro ratios that works best for me are 70-75/20-25/5 by percent or 125/100/20 by grams for the cut. My only refrigerator is at work. If I bring raw meat, it has to be eaten the same day, because food safety. I typically eat one large meal every day, and then a little bit more when I start to get hungry later at work. I'm looking for foods that I can bring to work and cook in an oven, or that do not require cooking. I can also add nearly any pizza topping for free. I work very close to a grocery store, so I can buy food as often as necessary. I have no allergies, am a touch lactose unhappy, but cheese is awesome so I can work through that.

I've already been spending an hour at a time at the grocery store examining labels and trying to match them with what I feel like eating on that day, and I'm great at keeping my carbs down, but I'd really appreciate any recipes or combinations of food that will help me keep my grocery trips to a short period of time.

Sweetness and ED behaviors xxketo

Like most of us, I'm sure, I have an extremely unhealthy relationship with sugar. I started keto because I consider myself an addict when it comes to carbs, and having a way to cut them down to the lowest number possible and still feel full seems like a godsend. I can't tell you how many nights I've laid in bed beating myself up for eating waaaay more than I planned to and completely losing control around food - almost always sweets of some kind or another. Mind you, this is five years AFTER recovering from years of bulimia.

So there I was yesterday, making myself a very small, very rich birthday cake. (I turn 26 today, yay!) I had to "try" it to make sure it tasted good. Once I had three slivers of that - going back and forth to the refrigerator, pulling it out, having just one more taste - I scraped up a handful of scraps and icing from the pan of cinnamon rolls sitting in the fridge.

Of course, this is nothing compared to my behavior even a few weeks ago. In an effort to combat the shame that comes with secrecy, I sat down on the couch, drank some water, and told my very understanding fiancè what had happened, and that I don't want a birthday cake this year. (He's not LCHF, and wanted to get a backup just in case my baking experiment failed.) I don't feel ready for sweets just yet.

That being said, will I ever be ready? Will I ever be able to have "just one" cookie, or even cook/bake with low-carb sweetener? Right now, I can't imagine a life without waffles on Saturday mornings, or apple pie for Christmas. Of course, I'm thrilled to imagine a life without food-induced guilt and feeling totally out of control. I know no one here has an answer for how this journey is going to go for me, but I'd love some support/commiseration or advice.

How can I change my outlook here to not feel like I'll be deprived from what everyone else can handle, and part of what makes eating enjoyable, for the rest of my life?

[NSV] I didn't eat the cake! xxketo

My fiancé's birthday was two days ago, and he requested a cake to celebrate. I picked up a 6" round from the grocery store, and it's been sitting in our refrigerator while he slowly eats it at the rate of one or two pieces a night.

I had one piece on his actual birthday, but after that, I had a strict hands-off policy. I'm a grad student on winter break in the gloomy PNW right now, and only one week two of keto. If there was ever a time I was going to boredom-eat or sugar-binge, it would be now, while I'm stuck in the house all day reading books for my thesis and waiting for the rain to stop.

Here's the awesome part: I didn't eat the cake!

It was calling my name this morning, so I left the house to run some errands. When I got back, I had already decided to fix our Christmas lights, which kept my mind off it.

Now it's all gone. The empty box is sitting on the table and my fiancé is napping off his sugar-high. And I only had ONE piece!

First day of Keto is xxketo

Today was my first day of Keto and my first time posting on this sub. I'm starting off while traveling for work. I feel like this is this time that I struggle with the most. When I drive for hours and don't take anything for lunch so I stop at a fast food place. This time I prepped for my four day trip. I cooked grilled chicken and shredded it. A bag of spring mix garden salad. Raspberry vinaigrette. Hard boiled eggs, cubed sharpe cheddar cheese, and smoked sausage sticks, an avocado, and some baby bel cheese. I figured I'd put all this food in my refrigerator in my hotel and go out to eat for dinner. I think I was mostly successful. I did go over my calories by 66 calories and my carbs ended up at 34g instead of 25g. Everything else was ok. I did drink Diet Coke as I'm not giving up caffeine during the work week. I'll start detoxing this weekend.

A little about me, I'm 27 years old. 250lbs (that's a guess because the batteries died on my scale). I'm only 5'3". I was diagnosed with PCOS when I was 15 years old and was put on bc and told to just "shave" my beard. I was devastated and didn't understand what PCOS was. My doctor said he wasn't going to worry about it until I wanted to get pregnant. I never felt like a girl because I didn't get my period. Even after the bc, I had to stop taking it because it raised my blood pressure. I was given metformin when I was 24. So between 15-24 I didn't have a consistent period and didn't feel like I ever hit puberty. Small chest but overweight. You can tell where I'm going with this. I had no confidence. I didn't make a big deal about it and played it off by pouring myself into my studies. I dated but never had a steady boyfriend. Intimacy still scares me. I have finally come to the realization that I might have depression. Years of not paying attention to my health or my body left me being single, 27 years old, overweight and depressed. I finally realized last week when I was helping my friend move some furniture that I was sweating from simply climbing the stairs. I don't want to be this way anymore. So for the first time in my life, I'm taking control. Step 1: I made an appointment with my doctor (different than the one who diagnosed me all those years ago) to discuss going back on metformin and spironolactone. Also to talk about the depression. I've never mentioned anything to him so he might be surprised. Step 2: after reading so much about Keto, I've finally started my journey. My goal is to stick with it for a month. I didn't want to set a weight goal because it'd cause me too much stress if I didn't meet the goal. So I'd rather stick with it for a month and see how it has affected me. Mentally and physically and then set a weight goal when I know I can stick with it.

TL;DR First day of Keto after having PCOS since I was 15 with not much help from doctors. Think I'm battling depression so I've made a dr appt to get back on metformin and spironolactone and to discuss depression meds. First day of Keto went well even while traveling!!

Desperately need suggestions for non-refrigerated snacks for an upcoming week of Keto-cheaters hell!! xxketo

On Friday I leave for 9 days to teach a field-trip class about Colorado Plateau geology to a group of 10th graders. As this trip is paid for by fancy oil company money, it is not your typical geology field-trip of camping and outdoor cooking. On this trip we will be on a luxury bus, staying at hotels for a week (a different one each night) and having breakfast, lunch, and dinner either catered or bought for us. Most of our breakfasts are listed as "continental breakfasts" at our 2 and 3 star hotels (read: store bought muffins, cereal, and juice), most lunches are Subway sandwiches picked up by our trail-driver and brought to us at a field-trip stop, and dinners are typically at road side diners and restaurants (i.e. Denny's, Applebees, etc.) from limited, pre-selected menu of available items to make serving our party or 50 easy on the restaurant. The kids love it, naturally.

For snacks, we're bringing what the trip-coordinator described to me as "bins and bins of snack foods for the kids." He specifically mentioned Oreos, Goldfish, granola bars and cookies. The idea is that the students aren't allowed to go into the convenience marts when we stop for gas because sending 40-ish students into a gas station to buy snacks would be a nightmare. But this will also make it difficult for me to run into these stores as well.

(The fact that I am incredibly uncomfortable with supplying these snacks in such quantities to impressionable high school students goes without saying. Unfortunately, this aspect of the trip is out of my hands. I figure the best I can do is set an example by not eating all that crap and making better choices.)

By now you're seeing my predicament: What the heck am I supposed to eat for a week?! I am extremely concerned about my ability to stick to keto based on my will-power alone in the presence of all this carby snack food, and I am very worried that I won't manage to find much to eat at all for keto at meal times. I need to stick to keto. I have been back on the wagon for a little over a month now. I have lost the weight I gained back by laziness and outright cheating. As of this morning I am officially less than 10 pounds away from being "Normal weight" and 23-ish pounds away from what I think my goal weight should be. But will power, especially in the presence of snacks is not my super-human power.

So this is what I need: What are your suggestions for non-refrigerated keto snacks and meals? I plan on stuffing my second checked bag (Thanks Southwest!) with keto goodies. I will have unreliable access to a refrigerator or microwave, even at the hotels. I will only seldom be able to skip into a convenience mart for foods. I cannot eat aspartame in any quantity, and have to severly limit Splenda and stevia. But I know I can't live on Almonds and Atkins bars for a week!

Here's what I am planning on bringing so far: - Almonds - Starbucks VIA instant coffee (because who know's where/when I'll get coffee) - Mini-Moos half-and-half pods - Atkins bars - Relatively low-carb Beef jerky (if I can find any, sheesh!!) - Avocados (but I am worried about their ability to not get squished) - Maybe so unsweetened iced teas or fizzy waters - ... and that's it.

[Recipe] Low-carb pie crust! xxketo


As promised, here is the low carb pie crust I've been working on. I want to make a note, though, that this recipe is still in development. I noticed when making this crust that there was still a bit of butter leakage, and though it is flaky it's still not QUITE as flaky as I would like it to be, so I'm going to continue making adjustments to this recipe before I post it over on my cooking blog.


Anyway, here's the recipe as is: * 1/2 cup almond flour (I use Honeyville) * 1/2 cup unflavored whey protein powder * 1/2 cup rice bran * 1 tsp xanthan gum * 1/4 tsp salt * 2 tsp granulated sweetener (optional, omit if making this crust for a savory pie) * 1 stick unsalted butter, cut into pieces and softened but still cool * 3-5 tbsp ice cold water


Sift together all of the dry ingredients and then knead in the butter with your fingers. You want it to all come together in a shaggy, messy ball, with lumps of butter still visible. The dough will be very sandy and dry.


Make a well in the center of the dough and carefully pour in 2-3 tablespoons of water to start. You want to add just enough water so that when you continue to mix by hand the dough is moistened and sticks together, not too much that it feels wet. If you were a baker pre-keto, you'll notice this dough gets sort of a slimy feel to it--that's the xanthan gum interacting with the water. Don't worry! It bakes out, just don't add too much water.


Form the dough into a messy ball and place it on a sheet of plastic wrap. Pat the shaggy dough into a slightly flattened ball and place it in the refrigerator for at least 30 minutes, to firm up the butter.


Unwrap the ball and place on a lightly floured work surface (you will need a tablespoon of flour for this part, so if you don't mind a little extra carbs you can just use wheat flour, AP gluten free flour, or if you really want to be purely LC use a little bit of rice bran).


Roll it out into a thick rectangle, about 1/2" thick, 5" wide, and fold it like sort of like a book divided on two hinges. Fold the right "hinge" over the center and then fold the left "hinge" on top of that. Roll out and repeat this step a few more times, then wrap tightly with plastic wrap and chill for another 30 minutes or so, until butter is firm again. This step is similar to how you make rough puff pastry, and helps to create layers of butter trapped within layers of dough, which in turn is what makes pastry flaky.


When it the butter is firm but still pliable enough to roll out, roll the dough into a big enough circle to fit a pie plate and carefully transfer. This dough gets sticky quickly as it warms up, so try to be quick and if you need to, sprinkle with a little more of your dusting flour of choice.


Crimp edges and place the prepared pie pan in the freezer for 30 minutes.


Preheat oven to 375 F. When the pie dough is firmed up again, line it carefully with parchment paper and fill with pie weights or dried beans. Cover the top entirely with foil as this dough browns very easily.


Bake 20 minutes, then remove foil, weights, and parchment paper. If you are making a pie that needs the filling baked, this is when you add it and bake as per instructions.


If you're making a pie with a fully baked shell, return the empty shell to the oven for another 20 minutes, until done. I recommend putting the foil loosely back on top for this final stage.


Pictures of the finished crust plus its final incarnation as a delicious chocolate cream pie.


Nutrition per 1/8 of pie crust: 185 calories, 16 grams fat, 5.8 carbs, 2.8 fiber = 3 net carbs, 6.5 grams protein
