Pressed Mediterranean Vegetable Sandwich VegRecipes

Pressed Mediterranean Vegetable Sandwich

An easy, make ahead pressed vegetable sandwich.

Ingredients

  • One loaf of ciabatta bread
  • 6 oz black olive tapenade
  • 10-12 ounces of fresh mozzarella, sliced into 8-10 slices
  • 1 large or 2 medium eggplant
  • 6-7 oz roasted red bell pepper
  • 12-15 fresh large basil leaves (or to taste)
  • Olive Oil
  • Salt and Pepper

Roast Eggplant

  • Preheat oven to 400'
  • Slice eggplant, 1/2" think
  • Place eggplant on baking sheet lined with parchment paper, brush with olive oil and sprinkle with salt and pepper
  • Roast for 25-30 minutes

To Assemble Sandwiches

  • Slice ciabatta bread horizontally and lay open
  • Layer eggplant, roasted pepper, basil and mozzarella on one side of bread
  • Spread tapenande over all
  • Drizzle with Olive Oil, Salt and Pepper
  • Place top of bread back on loaf.
  • Wrap with plastic wrap.
  • Place on tray and put another tray on top.
  • Place a heavy item (think cast iron skillet) on top of tray to compress and refrigerate for up to 24 hours.
  • Remove from refrigerator and slice before serving.

Notes I find an electric knife makes cutting the slices so very easy.

Black Bean-Mushroom Chili VegRecipes

From Eating Well Magazine about ten years ago or so. This stuff is so worth the effort. All the ingredients after the chipotles in adobo sauce are optional accompaniments. Here's a text version of the recipe:

Black Bean-Mushroom Chili

1 lb dried black beans, (2 1/2 cups), rinsed and picked over 1 Tbsp extra-virgin olive oil 1/4 C mustard seeds 2 Tbsp chili powder 1-1/2 tsp cumin seeds, or ground cumin 1/2 teaspoon cardamom seeds, or ground cardamom 2 medium onions, coarsely chopped 1 lb mushrooms, sliced 8 ounces tomatillos, (see Ingredient Note), husked, rinsed and coarsely chopped 1/4 C water 5-1/2 C mushroom broth, or vegetable broth 1 6-oz can tomato paste 1-2 Tbsp minced canned chipotle peppers in adobo sauce, (see Ingredient Note) 1-1/4 C grated Monterey Jack, or pepper Jack cheese 1/2 C reduced-fat sour cream 1/2 C chopped fresh cilantro 2 limes, cut into wedges

Preparation

  1. Soak beans overnight in 2 quarts water. (Alternatively, place beans and 2 quarts water in a large pot. Bring to a boil. Boil for 2 minutes. Remove from heat and let stand for 1 hour.) Drain the beans, discarding soaking liquid.   2. Combine oil, mustard seeds, chili powder, cumin and cardamom in a 5- to 6-quart Dutch oven. Place over high heat and stir until the spices sizzle, about 30 seconds. Add onions, mushrooms, tomatillos and water. Cover and cook, stirring occasionally, until the vegetables are juicy, 5 to 7 minutes. Uncover and stir often until the juices evaporate and the vegetables are lightly browned, 10 to 15 minutes. Add broth, tomato paste and chipotles: mix well.   3. Place the beans in a 5- to 6-quart slow cooker. Pour the hot vegetable mixture over the beans. Turn heat to high. Put the lid on and cook until the beans are creamy, 5 to 8 hours.   4. Garnish each serving with cheese, a dollop of sour cream and a sprinkling of cilantro. Serve with lime wedges.

Stovetop Variation: Total: 4-1/2 hours In Step 2, increase broth to 8-1/2 cups. Omit Step 3. Add the beans to the Dutch oven: cover and simmer the chili gently over low heat, stirring occasionally, until the beans are creamy to bite, about 3 hours.

Tips & Notes

  • Make Ahead Tip: Cover and refrigerate for up to 2 days or freeze for up to 3 months.
  • Equipment: 5- to 6-quart slow cooker

  • Ingredient notes: Chipotle peppers are dried, smoked jalapeƱo peppers. Ground chipotle chile pepper can be found in the specialty spice section of most supermarkets. Chipotle chiles in adobo sauce are smoked jalapeƱos packed in a flavorful sauce. Look for the small cans with the Mexican foods in large supermarkets. Once opened, they'll keep up to 2 weeks in the refrigerator or 6 months in the freezer.

  • Tomatillos are tart, plum-size green fruits that look like small, husk-covered green tomatoes. Find them in the produce section near the tomatoes. Remove the outer husk and rinse them well before using

Request: Vegetarian foods that will keep well without being frozen? VegRecipes

Hi there,

I'm about to spend ~three weeks travelling for work, and before I go I would like to cook up as much food as I can, for my vegetarian boyfriend to live off while I'm away. Throwaway because I want it to be a surprise, and he knows my username.

He's a perfectly capable cook, but prone to getting absorbed in projects and neglecting to shop or prepare food. To make things a bit easier for him (and make me feel less guilty about a long trip away) I'd like to leave some meals either pre-prepared or semi-prepared (like, ingredients mixed up and ready to throw in the pan).

However, we have the world's oldest refrigerator, and the built-in freezer is tiny - it would maybe fit a 2L tub of icecream, and fills with frost easily.

Can anyone recommend recipes that will keep well (in a fully prepared or semi-prepared state) without being frozen?

Advice needed: How to cook for an omnivore who loves meat VegRecipes


I am not a vegetarian but I am heading in that direction. Meat is expensive and I have very little money, plus it has a very short (refrigerator) shelf life compared to vegetables. Chicken is outrageously expensive here and I cannot keep eating cheap but fatty meats (my jeans don't like it).


My husband loves meat. I try to make a meatless meal or two throughout the week. He eats whatever I make, but I can tell that he doesn't like the vegetarian stuff. He hates mushrooms and tofu, so I can't even use those to "beef" up a meal. He told me last night that he has disliked every single vegan meal he has ever eaten.


With the no tofu and no mushroom thing, what in the world can I make for us that is meat free that an omnivore/carnivore would salivate at? We both like eggs and I make a good number of quiches, but with eggs being my go-to breakfast, I am wary of having too many (plus, our eggs are free range and organic from a local farm, so they can get pricey too.). Any advice (especially specific recipes)is greatly appreciated.


For info, I am in the Champagne region of France. Meat substitutes are not available, and neither is edamame (very unfortunately!!!)
