Advice needed: How to cook for an omnivore who loves meat VegRecipes


I am not a vegetarian but I am heading in that direction. Meat is expensive and I have very little money, plus it has a very short (refrigerator) shelf life compared to vegetables. Chicken is outrageously expensive here and I cannot keep eating cheap but fatty meats (my jeans don't like it).


My husband loves meat. I try to make a meatless meal or two throughout the week. He eats whatever I make, but I can tell that he doesn't like the vegetarian stuff. He hates mushrooms and tofu, so I can't even use those to "beef" up a meal. He told me last night that he has disliked every single vegan meal he has ever eaten.


With the no tofu and no mushroom thing, what in the world can I make for us that is meat free that an omnivore/carnivore would salivate at? We both like eggs and I make a good number of quiches, but with eggs being my go-to breakfast, I am wary of having too many (plus, our eggs are free range and organic from a local farm, so they can get pricey too.). Any advice (especially specific recipes)is greatly appreciated.


For info, I am in the Champagne region of France. Meat substitutes are not available, and neither is edamame (very unfortunately!!!)
