Is it okay to leave salted cabbage prepped for kimchi in the fridge overnight? (x-post from /r/kimchi) KoreanFood

So I screwed up and started salting and letting my kimchi sit, and when I went to make my kimchi sauce/blend with my food processor, I remembered my food processor is broken. Will the cabbage be okay overnight in my refrigerator or is this going to make my kimchi taste bad?

Korean Rice Cakes (tteok) Storage KoreanFood

About two weeks ago, I bought a 3 lb bag of Korean rice cakes. I immediately cooked about 1 lb of the rice cakes and threw the rest into a ziplock bag in the refrigerator. Are they still good? I foolishly threw out the original package without reading up on the proper way or length of time to store the uncooked portion.

Is it normal for Koreans to leave cooked food 'out' to be eaten the next day? KoreanFood

Sorry if this is the wrong sub-reddit for this question.

My Korean gf, makes an effort to leave cooked food (sometimes uncooked) out of the refrigerator that she plans to eat or cook the next day.

This bothers me. I've been thought to always refrigerate food. She claims the food will just fine if left out overnight.

Is this a Korean thing?

Thanks
