Electrical (US): Upgrade to a 100/125/150 or 200 Amp Main house panel? (2100 sq. foot) answers

context: the house I and my parents currently live in has been in dire need of redone electrical for years...my master electrician granddad basically just kept it going without actually making it right, always busy and all. HTis house is atleast 100 years old (by now), and still has the old asbestos coated wiring and some ceramic knobs in the attic. The current Panel is an old Stab-lok or Star-Lok, probably rated for 100A or less, and we have sub panels for our Oven, Dryer and 2 air conditioner plugs (240v).

Currently we have a 150A meter base as well (freshly installed after an ice storm) Im experience din running wire and troubleshooting electrical issues but Im not so good at figuring up overall amperage. According to one site's tool, we should be fine with a 150A panel. If we upgrade to 200A, we'll need to completely redo our meter base and power drop.

House specs, planned circuit layout: 2100 square feet, 2-30A 240v A/C pugs 1-30A 240v dryer 1-20A washer 1-40A electric water heater 1-50A Oven/Range 1-20A dish washer 1-20A microwave oven & vented hood 1-20A Refrigerator 1-20A Shop/shed circuit 1-20A-Master bedroom/bathroom (celing fan, heater/light) 1-20A-Hall bedroom/bathroom (exhaust fan, light, space heater) 1-20A- front bedroom (ceiling fan, 2 lamps, gaming PC) 1-20A-Den (gas fireplace, 42" LCD tv) 1-20A-Living Room (~40" LCD tv, Aquarium, wifi router/modem) 1-20A-Office (window AC 110v, wifi router, shredder, printer) 1-20A-Kitchen Lights & Plugs (coffee maker, keurig, counter lights, 3 light fixtures, toaster) 1-20A-Chest freezer

TL;DR: Overall it should come to 3 x 30A, 13 x 20A, a 40A and a 50A circuit, those larger than 20A being on 2pole breakers. If it weren't for the fact that I'd have to totally redo the meter base I'd go straight to 200A. But my question is: Is it necessary?
