It's tomato season, and I've got a whoooole lot of tomatoes in the garden, but they're ripening at different times. I feel like canning the ripe ones that fell off the vine would be silly for short term storage while I wait for the rest. I know the refrigerator would completely ruin their flavor, so that's not an option. Is freezing them a thing people do? Will they lose their flavor when I thaw them? I'm intending to use them for sauce, so turning mushy isn't a concern
