After replacing thermostat and defrost timer on my side by side whirlpool refrigerator, the evaporator coils are still frosting over. appliancerepair

I've taken a heat gun to the coils a couple times and once i replaced the thermostat and timer I was able to witness the heater in action and melting away any residual ice I didnt manage to remove with the heat gun. Since then, the coils keep frosting over and I'm not sure what to do to fix. This is causing the airflow to the fridge side to be hindered. With my previous thermostat, I had the temperature dial set to 4 out of 5. Model ed25pq.
