Maybe this is common knowledge, but I don't see many people doing it so I thought I would share this nugget of worldly advice: you can easily turn olive oil into a spread by chilling it in the refrigerator. I only have a shitty bar fridge so I have to put in the freezer for a while first, usually overnight. You may have different results with a better fridge. I find a ramekin or pinch bowl to be a convenient receptacle to put it in. It saves buying butter if you avoid dairy, has got to be healthier than margarine, and many people already have it in their pantry. I find it has a pleasant flavour that goes well with peanut butter on toast.
