Advice for running line to fridge from basement Plumbing

I want to run a new water supply line to a new refrigerator, and it's not next to any cabinets in the kitchen that have a water supply. But I have easy access to the floor underneath in the basement.

You can see that I have a softened cold line pretty close to where I need to go.

I'm looking for some advice/guidance on what you guys think would be the best way to go in terms of tapping into the softened cold lines here and going up through the floor for the fridge. I want to avoid any soldering.

The closest point (the bend in the picture with the 1" pipe) seems like a reasonable point to tap into. I also thought maybe using that stub-looking thing shown in the picture might be another approach that's less invasive to the existing plumbing. Or maybe it'd be better to have a longer run and go into that 1/2" pipe connection instead?

I was interested in running PEX for this. Should I just cut out a chunk of the 1" copper pipe at the closest point and put in one of those sharkbite Three-way Tees? Then run PEX from there? I think I'd also want some kind of valve to be able to shut-off the supply to the fridge (any advice on specific parts to buy for this would be much appreciated).

Any guidance would be appreciated. I feel like I can come up with lots of ways to do this, but I'd like to get some input to make sure I don't make this unnecessarily difficult.
