Been messing around with this for a while.
So I've been changing this around for a little bit but this batch came out quite good so I figured I'd share.
You'll need
- 10 eggs
- 1/4 cup Heavy cream
- 1 lb ground beef (substitute for bacon if you'd like)
- 3 cups mixed cheddar/mozzarella cheese
- 1 cup almond flour
- 8ish oz mushroom
- 1 cup chopped yellow onion
- 1 tsp cumin
- 1/2 tsp garlic powder
- 1 tsp coriander
- 2 tsp baking powder
- salt & pepper
- any other additional spices you'd like ( I used some cayenne)
Start of by sautéing the onions and mushrooms in some oil with Salt & Pepper.
Mix ground beef with cumin, coriander, and garlic powder then brown in a separate pan. Add in onions and mushrooms when beef is browned.
Mix cheese, almond flour, and baking powder in a large bowl. When beef/onion/mushrooms are done mix all this good stuff together.
Grease up a large casserole dish and spread the previous mixture evenly throughout.
In a large bowl, blend up your eggs with some spices and heavy cream then pour over everything in the casserole dish.
Bake at 350 degrees for about 30 Minutes. Let cool on counter for another 10 minutes.
This makes 8 servings. Per serving (roughly):

Net Carbs: 5
Protein: 34
This dish keeps quite well in the refrigerator and is crazy filling. Feel free to mess around with it and let me know what you think.
