Healthy Lunch Woes EatCheapAndHealthy

Howdy r/EatCheapandHealthy,

I often lurk here when I need a new idea for something to do for dinner, but now I'm trying to tackle lunches, and I'm not having a lot of luck.

Ideally I'm looking for something portable, 300-500 kcals, and easy to store for a week (I prefer to just do the weeks food prep on Sunday). At work I have access to a refrigerator so that's not an issue.

I have been doing mason jar salads (chicken, dressing, nuts, greens) but often by the time Thursday and Friday roll around the greens have totally wilted and I end up throwing most of the salad away.

Looking for new and tasty/healthy ideas for the meal I have the least ability to plan/execute properly! Thanks
