I've been reading Dr Fuhrman's Eat to Live book, and I'm ready to transition to a vegan diet, except for one thing. I'm not a fan of salads and raw vegetables! I also don't cook, so I'm in a quandary on how to pack my lunch for work.
Dr Fuhrman recommends at least 1lb of leafy green vegetables a day to get enough micronutrients. Is that really necessary? What can I substitute the salads with and still get enough nutrients? I'm perfectly happy eating soy products, nuts, legumes, and unrefined grains. Steamed or stir-fry vegetables are also fine with me, but can these be stored overnight in a refrigerator and reheated in the office? Like I said, I don't cook so I have no idea. :)
