Field Camp Food geology

Hello, everybody. Geology undergrad here. Saw a posting for a cook for my university's geology field camp and, eager to earn the sizable paycheck and check out how our field camp works before I actually attend, I decided to apply.

Part of the application is to prepare a sample 6 day menu for breakfast and lunch. I am fairly experienced at cooking and work as a line cook at a local brewery/restaurant, so I have some chops. My question is, if you are coming in from 8 hours mapping in the Basin and Range in Nevada in May/June, what would you like to dig into for dinner?

Facilities as explained to me include a flat top, propane refrigerators, several burners, two grills, and an oven. Groceries will be bought probably every week since we have about that amount of storage.

Basically, just looking for some advice here to get some ideas. I know I will have to make some dietary concessions for at least one gluten free person and a couple vegetarians, but those are usually pretty easy with a little imagination.

Thanks for the help!
