Today I made my first lemon whipped cream frosting by following this recipe:
When I started, it seemed great! I think had stiff peaks (not sure because this was my first whipped cream frosting, but looked about right?), so I added in the pie filling. It got a little soft, but nothing too crazy, so I finished by adding in some yellow Wilton coloring gel and a little lemon juice.
I was able to frost the top of the cake just fine (if a little thin), but by the sides it was turning into runny soup. I kept it cold the whole time by putting it in the refrigerator as needed and re-whipping it, but nothing would make it firm up again.
Reddit bakers, do you have any idea about what could have happened??? I am so disappointed in my cake and not even sure if that soupy frosting is safe to eat :(
