I travel for work 3 days a week. I need help creating a meal plan that is affordable. Frugal

I come here because I want to tighten up my spending when I travel. What makes it difficult is that have no breaks all day. I travel Wed-Fri. I leave my house at 7am on Wednesday, arrive at my destination at 9. I have work from 09:00 to 20:00. I also have no access to refrigeration until 20:00. Thursday I have off. Friday is the same schedule as Wednesday.

What I usually do is eat out for breakfast, lunch, and dinner on all 3 days and I'm sick of it. It's not that I can't afford it, I just see it as a waste of money. So I had the idea that if I brought a cooler filled with ice I could pack at least my breakfast and lunch for my first day. The problem I have is that the food has to remain cold for 11 hours until I can get it to he fridge in my hotel. I'm not sure if cold paks or ice can hold refrigerator-like temps for so long.

What I have come up with thus far:

Cook a large soup pot on Tuesday night. Have that for dinner and pack the rest for lunch on Wednesday. I can also pack cereal, milk, and fruit for breakfast on Wednesday

Eat out for dinner on Wednesday.

Skip breakfast on Thursday because I sleep in and I'm am not too fond of my hotel's breakfast.

Eat out lunch and dinner.

Take my leftovers from Thursday for lunch. Eat power bars and fruit for breakfast. Eat dinner at home on Friday night.

I could use some tips on what foods I can take or pack with me that will make my trips less expensive. I love recipes like this are things that I think that would work well. I've thought of packing sandwiches but I like assembling sandwiches right before eating. If I prepare it in advance the bread gets soggy and tastes like shit.
