Some Help for Holiday Food Gifts? AskCulinary

Happy Holidays! I'm trying to finish up my gift baskets, I have a few questions. Solutions would be much appreciated.

Pickled Artichokes: Artichokes and garlic in olive oil, vinegar, and spices. Is it alright to store this at room temperature (the oil would solidify in the refrigerator)? Also, I got a little oil on the outside of the jar and I'm having an awful time trying to remove the residue so it's all nice for the gift basket.

No Knead Breads: I'll be making the dough tonight and baking them tomorrow. They'll be in transit tomorrow evening and need to keep well for Christmas. Should I freeze the loafs? Or any better suggestions for keeping them as fresh as possible?

One more question; can you use wax like parchment paper? I'll be using wax paper to transfer the dough (can not find parchment anywhere in my neighborhood), but I'm not sure if it's safe to go in the oven. I can plop the dough off the wax, but the instructions suggest dropping the dough in the pan with the paper. I'm using cooking spray so it doesn't stick to the pan, or is there something better?

Thanks for the help!
