Finally posted my Salsa Roja :D recipes

One of my absolute favorite go to snacks and dirt simple to boot.


Ingredients

* 36 ounces Cherry tomatoes

* 1 white onion

* 2 jalapeƱos

* 5 cloves garlic

* 1 half teaspoon ground cumin*

* 1 half teaspoon black pepper*

* 1/2 teaspoons salt*

* The juice of one lime

* Large handful of cilantro


Directions

Add everything except for the spices, juice, and cilantro to a well oiled sheet pan and place on the top rack of your oven with the boiler turned to high (tomatoes whole, onions and jalapeƱos rough chopped, garlic in whole cloves with the skins on.)


Roast the ingredients until well blackened, rotating the pan a few times and stirring once. Allow to cool, remove the garlic skins, and then add along with everything else to a blender and pulse until smooth.


Allow the salsa to set up in the refrigerator for 12 hours and then checking for seasoning. Adjusting to taste.


Enjoy with, well, anything :D
