A few months ago I found out about Sous Vide and decided to see what I could do to get started in it. I'm on a tight budget, so all the premade setups were completely out of the question. I figure a few people here could be in a similar situation, so I decided to share my SIMPLE diy setup that has been giving me the most amazing chicken breasts I've ever had. All of my setup was locally purchased and required no electronics knowledge if that scares anyone.
Most important part, the temperature controller. I picked up a Johnson Controls A419 (http://ift.tt/1xTcfid) at a local home brew beer supply store. It has a plug, an outlet and a thermocouple. Plug it in and plug in your heating unit (we'll get to that in a minute) You'll need to open it with a screwdriver and move a jumper from cool to heat, then it's just a matter of setting the desired temp.
As for the heating unit, I started with a basic crock pot. It worked great, but I found even a 7 quart unit severely limited the amount of food I could cook. I recently moved up to an Oster 22 quart roaster oven (http://ift.tt/1Hs2P2C) Just fill it up with water and go. I find setting the temp around 200 on the knob keeps it from getting too hot. You will have to keep the lid off, or it'll get too hot (I learned that by testing without food luckily)
You may find better parts or these parts cheaper, but I picked them all up within 5 minutes of my house and it WORKS GREAT! If you have any other DIY setups, I'd love to see. And yes, I know I need to add a bubbler. I'll do that later, but it's been working well without it so far.
