These are my experiences with a new experiment and so far it's working.
In August I brewed an Irish red using WLP004. I made a 2L starter, refrigerated the night before brewing and decanted about 2oz of the clear starter wort into a 4 oz mason jar. I decanted as much clear started as I could and swirled the concentrated yeast into my wort, but I did top off the mason jar first. The Irish red came out great and I stored the yeast in the refrigerator. After settling, I was surprised that only 1/8" of yeast covered the bottom.
I brewed a porter yesterday. I made a starter using the mason jar yeast three days in advance, and bought a new package of the same yeast just in case. Five hours after pitching this yeast took of fantastically. I'll let you know about the beer taste later on but so far this worked. I didn't save any of this yeast because I bought my spare yeast and will need to use that, but I'm happy to know that the 4 beer strains and the one mead strain I saved are not a waste of space!
