First batch mostly successful, looking for a few pieces of wisdom to evolve Kombucha

My first gallon is done and bottled. I let the bottled batch sit at room temperature for 2 days and then placed both 32oz. flip top bottles in the refrigerator. I was expecting some serious carbonation as the room I am brewing and fermenting in rests in the mid to high 70s. I wouldn't call the batch flat, but it's not more carbonated than the 12oz. bottle I had to test out my first ever brew right after it was done. So should I try 3 days 4 days?

Second thought was: What happens if I use tea with oils like Earl Grey?

Lastly, is it possible to infuse the batch during the initial fermentation process with anything? I wanted to use fresh pomegranate but though sending the seeds through the food processor would yield a much stronger taste than adding the whole seeds to the bottled batch, only to have to pick them out afterwards.

Thank you in advance. This is a strange new world for me, and none of my friends in the area understand it, or are even willing to try it.
