How do you keep healthy food from going bad so quick? EatCheapAndHealthy

So it's just my SO and I in our moderately sized place. We have a full sized refrigerator, which I was hoping to stock up easy, healthy snacks and vegetables. I'm finding time and again that if the item doesn't have a ton of preservatives or isn't eaten immediately, it goes bad before we can get to it. I've lost too many broccoli heads and carrots to time! I've even had things of nuts go dusty on me. So now most of our pantry is packaged or frozen foods. How do I defeat time?
