I posted over a few weeks back after "finalizing" my weekly meal plan and got a lot of good feedback. Because of this I've made some revisions and I'm hoping to get more feedback while also showing what I have and maybe helping some people.
Breakfast | Fruit Smoothie
1 1/2 Cups Frozen Fruit (Bananas, Strawberries, Blueberries) - 105 Calories
1 Scoop Whey Protein Powder - 120 Calories
1 Cup Fat Free Milk - 80 Calories
TOTAL = 305 Calories
Lunch | Sandwich w/ Sides
2 Slices Whole Grain Bread - 138 Calories
1/2 Cup Chicken - 120 Calories
Spinach - 20 Calories
1 Tbsp Sandwich Spread - 70 Calories
1 Medium Apple - 95 Calories
2Tbsp Smucker's Chunky Peanut Butter - 200 Calories
TOTAL = 643 Calories
Dinner | Red Lentil Curry OR Chicken w/ Sides
2 Cups Chicken - 480 Calories
5 Asparagus Stalks - 15 Calories
1 Red Potato - 163 Calories
1 Medium Carrot - 25 Calories
4 Tbsp BBQ Sauce - 318 Calories OR 1 Can Cream of Celery - 90 Calories
TOTAL = 683 Calories BEFORE the Sauce | 963 w/ BBQ Sauce | 773 w/ Soup
Red Lentil Curry TOTAL = 562.5 Calories
This is my main diet six days a week. Once per week I have ramen for dinner as a treat to myself but I don't have the ingredients / math on that as I'm still trying recipes. It should be about the same calorie count as my usual dinner though.
My current goal with this diet is affordability, sticking to what I like, and not having to take a bunch of time for cooking. My current routing is as follows:

Make the smoothie the night before and put it in the freezer. I put it in the refrigerator before bed which keeps the consistency nice for the morning but still lets me grab and go.

Make the sandwich the night before and get my lunchbox setup. Grab and go.

Make three days worth of chicken (crock pot) and make the vegetables when I get home, usually takes 30 mins.
I try to budget $200 a month for groceries and have been able to keep to that, although I'll likely go a bit over due to trying some new things this month. In the future I will be phasing out BBQ Sauce as it's less healthy than the soup I use and more expensive, just need to burn through what I have.
The biggest change I made was moving from having chicken every night as that was getting a bit pricey when there are no sales and it was also a bit dull since chicken is chicken no matter how you dress it up. I don't find myself ever feeling hungry with this routine except sometimes between breakfast and lunch, when I get to eat at my job is variable so sometimes it isn't until 2-3PM. I also haven't had any problems with energy even on my workout days, although I will have to monitor that as I'll be kicking my routine up here soon.
So, anything I could improve on? I know having the same breakfast/lunch everyday seems a bit boring but I really like and work well with routines so it doesn't bother me at all and having some dinner variety keeps me sane. I tried adding some things to my breakfast but I am not a morning person so I usually drink the shake at the office but doing that plus eating something can be a hassle.
