[Kegging] Want to make a seltzer water tap for my lady for X-mas, don't have kegging equipment. Do you think this setup will work? Homebrewing

Hey homebrewers, sorry that this post is not about beer, but about carbonation and kegging. I've been homebrewing for ~10 years but always been bottling. What better way to get into kegging than making a carbonation setup for your sig oth, then slowly transitioning over to kegging beer?

My GF loves sparkling water and I want to make a carbonation and dispensing system for her. Now, I do not want to use the plastic bottle method (we already feel guilty about the plastic when we buy seltzer water in the store, and also I want something a little more refined looking since it's a gift). Here is my tentative plan, please let me know if you think this would work.

What I want to do is carbonate a keg of water. Since I don't have a dedicated fridge for kegs, I want something that can fit in our current fridge. So, I was thinking about this 1.75 gallon keg as the vessel for carbonation. It says it is rated up to 130 PSI and the pressure relief valve goes to 60 PSI, so it should be fine for water, correct?

For carbonation - I just plan on using a standard CO2 tank and regulator to force carb in the keg as mentioned above.

For dispensing the seltzer from the keg - this keg is going to be in our refrigerator. I was wondering if I could use either those small CO2 cartridges to dispense the liquid (after main carbonation with the big tank) with this regulator or without regulator; or maybe use a paintball gun CO2 cannister that can easily fit into my fridge [with this regulator]().

Questions - will the small CO2 dispensing system in the fridge work? My concern is that you need about 30PSI in the tank to carbonate the water. When I attach the small CO2 tanks and put the unit in the fridge, will these small tanks run out very quickly due to the loss of liquid volume in the tank once you dispense? Also, I guess I'm not sure if I need to keep the entire keg at 30PSI in the fridge or not, or if you can lower it once it's been carbonated. Is there any problem with keeping these small CO2 tanks in the fridge?

Are there any mini regulators that are cheaper than those I've linked? I'll begrudgingly go with one of those options, but I'd prefer something cheaper of course.
