I need help replicating my grandmother's beef stew. Cooking

My grandma was always known for her beef stew. She was always very secretive about it too. She would never allow anyone in the kitchen while she was cooking. She always told me that when I got married she would show me how to make it. Unfortunately she passed away unexpectedly last month. My grandpa is not taking it well and we share a birthday next week so I thought I could try and replicate, or atleast get close to her beef stew and make it for our birthday.

Now I know absolutely nothing about cooking but im trying to learn. I can follow a basic recipe but thats about it. Which is why I was hoping that someone would have a recipe that sounds similar to hers. She cooked it on the stove and not in a crock pot. She would always use a beef chuck roast, potatoes, carrots, and onions. The gravy was a light brown with an orange color to it so I imagine she use tomato juice or paste, not sure which. It was quite soupy not really thick, but after it cooled and was put in the refrigerator it would turn thick and kind of light gray in color. I don't know if that's enough info to give an idea on what to do or not. Any advice or ideas anyone may have would be greatly appreciated.
