Food safety. MealPrepSunday

Forgive me if this has been asked before. I've been a part-time lurker for a very short time.

Last Thursday was the first time I actually prepared a week's worth of dinners. In the past, I've made 3-4 days worth of dinners. Last night I was having my last dinner for the week (today is grocery shopping day) and it crossed my mind that maybe chicken isn't safe to eat after 6 days of sitting in the fridge? I should have taken a picture, but the chicken just looked off in colour compared to the rest of the days I've eaten it. The chicken I made is boneless, skinless chicken thighs baked in the oven.

This chicken dinner I make is one of my favourite meals so I'd hate to stop incorporating it in my weekly meal prep, so I was thinking about freezing it. For example, I'd keep two dinners in the fridge and the rest would go into the freezer. In the morning, I would take one of the freezer dinners and let it thaw in the refrigerator all day then eat it up in the microwave when I'm ready to eat at the end of the day.

Also, what foods get "ruined" in the freezer? I know it's not good to freeze salads and certain vegetables. Does anyone have a suggestion or comment about my overall post?
