Help - How can I cap a 1/4" female ended water line Plumbing

I'm renting a new house and I just got my refrigerator delivered and ice maker connected. It seems the waterline is split. I couldn't twice or pull the splinter off easily.

Is it possible to cap the other end off and tuck it behind the fridge. If so can you please post the part needed or propose a simple solution.
