You can also substitute fava beans with garbanzo beans if you can't find favas.
Igredients
The Chicken and basil sauce
- 4 chicken breasts
- 4 tablespoons olive oil (maybe an extra table spoon or two for brushing the chicken)
- 2 garlic cloves
- 1/2 a basil bunch
- 1/2 teaspoon chili flakes (or more if you want)
- 1 onion chopped
- salt and pepper
Fava Bean Salad
- 4 tablespoons olive oil
- 1 finely chopped onion
- 2 cups of fava beans
- 1 lemon/lime, juiced
- 1/2 bunch of cilantro, chopped
- 2 garlic cloves, minced
- 1/2 teaspoon cumin
- salt and pepper
- (optional: fresh pomegranate seeds)
Cooking
- Preheat oven to 350F and brush the chicken with the oil and season with salt and pepper. heat skillet or frying pan and add in the chicken breast skin side down and cook for 5 minutes. turn over and cook for another 2 minutes. remove the chicken from the pan and place in an oven safe dish skin side up.
- add garlic, basil and olive oil to a food processor until a smooth sauce (pesto-like) consistency, adding any extra oil if need. pour basil sauce around the chicken in the dish and sprinkling over the chili flakes and adding the chopped onion. roast for 30 minutes.
Preparing/Making Salad
- Take all the ingredients and mix them in bowl. place in refrigerator for at least 1 hour before serving.
Serving Suggestion
- Place chicken breast on plate, then pour over the basil sauce. (optional: sprinkle top with any leftover pommegrante seeds) then place a portion of the fava bean salad on the side. this meal is also nice with some Lebanese flat bread or just regular pita bread.
