Refrigerator with a vacuum or inert gas? askscience


I was reading recently that the reason we need to keep foods covered in the fridge is that the flow of oxygen promotes the growth of harmful bacteria. Was just wondering if it might be feasible to have a fridge that maintained an interior vacuum or else an atmosphere with an inert gas?


Anyone have any thoughts on advantages/disadvantages/implementation issues?
