Refrigerating food sousvide


Do I have to treat food that has been cooked sous vide differently from regular cooking? I see many posts about how the sous vide cooked food has to be water chilled if there are plans to store it.


I plan to get an immersion cooker but I foresee situations where I will not be eating immediately. Can I simply toss my food in a cooler bag to a party or does it need to be in a cooler filled with water? For leftovers, can't I simply toss it in the refrigerator for the next day? Is it ok to cook a batch of meat for my work lunches for a couple of days and refrigerate instead of freezing?
