Hey all.
I discovered that I had a gluten sensitivity when I was in high school and went completely gluten-free. Life was fantastic. I felt alive and alert and so much healthier... well, until I started eating all the substitutions and experienced weight gain. Fast forward a few years and I started incorporating more foods with gluten back in to my diet, as I could limit what I ate and still kept a balance. I listened to my body.
This past fall I transferred to a university and I live in a dorm and eat the cafeteria food. I already struggle with eating the processed food, so eating their gluten-free AND processed food was a huge struggle. I decided to give up the gluten-free life and just eat what was convenient there. Since being back from winter break, I've become very ill and I know it's from eating such a gluten concentrated diet. I am repulsed by the food in the cafeteria and am trying to find snacks and meals that I can eat in my dorm. I have a microwave and a refrigerator. I'm just wondering if you guys have any ideas for gluten-free snacks and easy to "make" meals that I can make in my dorm. I'm still planning on going to the cafeteria, I'd just rather not have to visit it as frequently.
