I have a 20lb frozen turkey that I want to cook for Christmas day. When is the earliest/latest I should consider defrosting the turkey if I do it in the refrigerator? We had an issue Thanksgiving where the turkey wasn't thawed, so we ended up not having any turkey for dinner. Luckily we had too much food before dinner and no one was all that hungry.
Anyway, Christmas is in 8 days. Could I throw it in the fridge now or would that be too soon? I've heard 24 hours for every 4-5lbs, so I'm thinking 5 days would be the minimum but I don't want a repeat of Thanksgiving.
I'm figuring I start defrosting now to give me some time to brine at the end... should I do that or just skip the brining?
