My wife inherited this recipe from her long gone great Aunt. Every year we make it and its nice but the cakes are flat and dense. Can you guys look at this recipe and recommend a way to make it lighter, fluffier, less-dense ? Maybe it's the baking soda or sifting of the flour, we aren't sure but it can use a bit of improvement. THANKS!
Aunt Bootsie’s RED Velvet Cake
Items needed 2 sticks of butter 1 cup of buttermilk 1 cup 1 ½ oz of sugar 2 eggs
2 ¼ cups of flour 1 tablespoon of cocoa ½ tea spoon of salt 2 teaspoons of vanilla 2 oz. Of red food coloring 1 teaspoon of baking soda 1 teaspoon of vinegar 1 cup of milk 1 cup of Crisco lard The Recipe Cream 1 stick of butter 1 ½ oz C. sugar 2 eggs
Dry Ingredients 2 cups of flour (sift 3 times) 1 tablespoon of cocoa ½ tea spoon of salt
Alternately add creamed ingredients above and 1 cup of buttermilk to dry ingredients Slowly add (while stirring) 1 teaspoon of vanilla and 2 oz. Of red food coloring Beat Mixture well and fold in the baking soda solution- Dissolve 1 teaspoon of baking soda in 1 teaspoon of vinegar Bake in 2 layers at 350 degrees for 30 –35 min LET COOL BEFORE DUMPING
ICING Pudding Mixture Cook the following 3 items over low heat to a pudding consistency (stirring the whole time and then set aside to cool) 1 cup of milk ¼ cup of flour dash of salt Cream mixture Cream the three ingredients below- 1 stick of butter 1 cup of Crisco lard 1 cup of sugar
Than add 1 teaspoon of vanilla
Adding pudding mixture to cream mixture and beat until smooth. Spread on cake and add 1 can of angel flake coconut ( around 12-15 oz) Keep in refrigerator
