Stumbled on this recipe and loved it! I figure it's a healthy alternative to a lot of other Thanksgiving foods.
1 (15 oz) can chickpeas (skinned) ½ cup tahini paste Juice of ½ a lemon 2 small cloves garlic (roughly chopped) ¾ teaspoon salt (or more to taste) Reserved chickpea water from the can Olive oil, parsley, paprika (for serving, to taste)
Directions: 1. Drain the can of chickpeas, saving the water for later. 2. Remove the chickpea skins by gently pinching the chickpea between your fingers, angling the pointy side towards the open palm of your other hand, until the skin pops off. This may take a few minutes to skin all of the chickpeas. Discard the skins. 3. Place the skinned chickpeas in a blender. Pulse blend until crumbly. Scrape and reblend as needed. 4. Add the tahini, lemon juice, garlic, and salt to the blender, and blend until smooth. 5. Slowly add the reserved chickpea water to the blender a small portion at a time, followed by blending. Do this until the mixture is completely smooth and can blend without catching. Chill mixture in refrigerator for approximately one hour. 6. Top with olive oil and parsley, and sprinkle with paprika. 7. Serve cool.
