So, I am cooking a turkey for my friends' Thanksgiving on Wednesday. I want to start it around 5 PM. My friend only got the turkey today and it's an 18 pounder. This doesn't really give me enough time to thaw it out in the refrigerator, right? This is all new to me. I plan on following Alton Brown's recipe for a Perfect Turkey, so I still need to brine the thing for a couple of hours Wednesday morning as well.
So, how should I go about thawing this bad boy?
