I was answering someone else's question and thought that there are probably a TON of people on here who are just as busy as I am and want to lose weight. Here's my go-to recipes for the week. All of this can be prepared at the same time in one afternoon, and taken with you, even if you work long days like I do! I'm just copying and pasting to save time. Thought it might help some others, and I want to return the love you guys have shown me thus far!
Hey buddy! I'm in the same boat. I work 8-5 and then 5:30-11 at two jobs every day! I have Sundays off. Recently I switched to Paleo and cut out grains, as well as energy drinks and sodas-- which, if you're anything like I was in college, you probably subsist on right now.
So, I have Sunday's off. My one day. I try to plan and get ideas throughout the week for the next week-- nothing major, just if I see a recipe or have an idea, I jot it down. On Sunday's I go grocery shopping and do meal prep.
Usually I hardboil several eggs and peel them and keep them in the fridge for grab and go breakfast. This week, I made these bad boys for breakfast; you can double the batch and freeze the other half. http://ift.tt/1ueYGcB
Edit: if anyone is interested, you can do a million renditions of these. This week I did eggs, sausage, spinach, green pepper, and zucchini! You could do ham, onion, carrots, kale, different peppers-- anything.
I package two at a time in ziplocks. Warm them up for 30 seconds in a microwave, boom! Breakfast.
Then for lunch I make tuna with Paleo mayo, or avocado if you have a few mins the night before: http://ift.tt/1ueYGcC
Or you could do mason jar salads. You put sauce on the bottom, then meat, then veggies, then your spinach or lettuce. Put a papertowel on the top and screw the lid on. They keep for a WEEK at LEAST. Grab one. You can dump it out on a plate or shake the jar and keep a fork with you. Here's a basic reference for packing order: http://ift.tt/1xCj5rh
I also make sweet potato chips or nut and seed bars for snacks. Here are those recipes. The chips are super cheap, and take 40 mins for a batch. I used 3 potatoes and had to use 3 baking sheets, just a heads up.
Dinner is harder because my second job is retail, so I barely have time to sit. Sometimes I'm still full enough from the day that I don't need dinner. When I am at home, or have a minute to take dinner with me, I'll pregrill chicken or steak, pan steam green beans, or eat a salad.
You can get all of this done with the right multitasking skills in a couple of hours. All of this you could take with you and eat throughout the day, even with limited access to microwaves, refrigerators, etc
On a final note-- I've lost 7 lbs in 6 days by switching to Paleo and cutting out grains entirely! You end up saving money too because you're not able to constantly eat out or stop at a convenience store for an energy drink and snacks when you're on the go.
