Struggling with logging homemade food prepared in large batches loseit

I am seeing a dietitian who wants me to keep track of my food intake for a few sample days. I tried to use My Fitness Pal (MFP), but ran into a lot of difficulty due to the way that I prepare my food.

Due to my severe food allergy, I cook almost everything from scratch. All of my baked goods, sauces, condiments, etc. are all homemade. It is very time consuming to do all of this cooking, so I usually make things in large batches and freeze individual portions. For example, I baked bread one day and froze about 200 individual slices. I made a paneer curry another day and froze several quarts. Much of the food that I eat on a daily basis is reheated frozen food that I have made from scratch in the past.

Obviously, I do not have nutrition labels for any of this food. I do have approximate recipes (since I made the food), but I didn't carefully measure out all the ingredients when I cooked. For example, when I made the bread, I might have started with 5 cups of flour, then added up to one more cup in the kneading process. When I cut up the bread, not all of the slices turned out the same shape and size. Some of the slices are 2 or 3 times as large as others. When I made the curry, I added a bit of oil to the pan. Maybe it was a teaspoon, or maybe it was a tablespoon. Most of the curry ingredients were vegetables, which I just added in approximate amounts. The main source of calories in the curry is the paneer. If I eat one particular cup of curry, I might get 3 pieces of paneer, but a different cup of curry might have 5 pieces. In the future, I suppose I could be more careful about measuring and portioning things out, but I would have to plan this weeks or months in advance.

In the recipes section of MFP, I see that I need to enter the number of servings that the recipe makes. What if I don't know? For example, I want to make a pasta dish for lunch. It will contain pasta, sauce, vegetables, cheese, olives, and pine nuts. I do not know how much volume the recipe will produce, or exactly what a serving will be. When I put the leftovers away in the refrigerator, do I need to measure it out in measuring cups to see how much total the recipe produced?

TLDR: I am struggling with entering homemade food prepared in large batches into My Fitness Pal. How can I get an accurate measure of what I am eating? Thanks for your help.
