Hey Homebrewing, this is probably one of the more naive questions I'll try to ask but I appreciate any insight I can get. About 6 days ago I bottled my first homebrew after a week in the primary and 2 in the secondary. I realize that 2-3 weeks in a bottle is pretty normal to start getting "good" taste, even for the Witbier style I put together. The only thing is, I'm excited and couldn't wait to start tasting!
So, I chilled the bottles down in my refrigerator and poured a glass once the bottle was well chilled. The beer has a tiny head but has relatively decent carbonation. The only thing is there's a strange taste, something I would describe as tart. My wife said, "there's a really strong bite in the middle taste". The beer starts and finishes how I hope it would, leaving a lingering taste of orange bitters and coriander that I was looking for, and generally a "unfiltered wheat" mouthfeel that I was anticipating. The only off bit is the sharp/tart taste in the middle. I'm guessing that this is just a conditioning issue, and another week or two will really mellow the middle of the beer out for me.
I don't think it's so gross you can't drink it (in fact I've had two) but, I am hoping that this is something that will die out over time. I'm not very experienced at identifying off-taste, and I realize that I'm trying to verbally describe a taste sensation, but any info would be appreciated.
As an aside, I'm visiting the LHBS tomorrow to pick up supplies for my christmas beer and was considering brining a bottle of my homebrew along to try and get a more experienced, first hand opinion. I'm not sure if this is a major faux pas, and planned to phone ahead to ask them directly, but if someone wants to warn me that I'll embarrass myself I'd appreciate it.
